Ingredients

Method
 

  1. In a mixing bowl, whisk the egg, sugar, and melted butter until slightly frothy.
  2. Add milk and vanilla extract, then fold in flour, baking powder, and salt until smooth; small lumps are okay.
  3. Let the batter rest 5–10 minutes; it will puff slightly as baking powder activates.
  4. Preheat a nonstick skillet over medium heat (325–375°F) and lightly grease with butter or spray.

  7. Flip carefully and cook the second side until golden brown, 1–2 minutes.
