Ingredients
  

  • 8 ounces light rum
  • 2 ounces dark rum
  • 2 ounces brandy
  • 1 ounce gin Optional for a more traditional tiki flavor
  • 3 ounces orgeat syrup Or substitute grenadine for a sweeter version
  • 6 ounces pineapple juice
  • 6 ounces freshly squeezed orange juice
  • ounces freshly squeezed lemon juice
  • 1 cup fresh pineapple chunks
  • 1 cup ice
  • 2 cups large ice cubes For serving
  • 4 slices orange
  • 4 maraschino cherries
  • 4 pieces fresh pineapple chunks For garnish
  • 4 long straws
  • ounces overproof rum – 151-proof Optional for the volcano presentation

Equipment

  • Blender
  • Large punch bowl or Scorpion bowl
  • Measuring cups and jigger
  • Long spoon
  • Citrus juicer
  • Knife and cutting board

Method
 

  1. Add the pineapple chunks and 1 cup of ice to a blender. Pulse a few times until the fruit is finely chopped.
  2. Pour in the light rum, dark rum, brandy, gin, orgeat syrup, pineapple juice, orange juice, and lemon juice. Blend for about 15–20 seconds until smooth.
  3. Taste the mixture before serving. Add a splash of lemon juice if it's too sweet or a little more orgeat if it's too tart.
  4. Fill a large Scorpion bowl or punch bowl with the large ice cubes. The bigger cubes melt slowly and keep the drink flavorful.
  5. Pour the blended cocktail over the ice. The mixture should look smooth, frothy, and lightly slushy.
  6. Garnish with orange slices, pineapple chunks, and maraschino cherries. Arrange the fruit around the bowl for a colorful presentation.
  7. If using a Scorpion bowl with a center reservoir, carefully add the overproof rum and light it using a long lighter. Always extinguish the flame before serving.
  8. Insert long straws, serve immediately, and enjoy while the drink is cold and fresh.

Notes

  • Freshly squeezed citrus juice gives the brightest flavor and balances the sweetness.
  • Blend only until smooth to keep the drink thick instead of watery.
  • Mix the liquids ahead of time and add ice just before serving for the best texture and flavor.
