Ingredients
  

  • Strawberry Daiquiri Layer
  • 1 ounce white rum
  • 1 cup strawberries fresh or frozen
  • 1 ounce fresh lime juice
  • ½ ounce simple syrup
  • 1 cup crushed ice
  • Piña Colada Layer
  • 1 ounce white rum
  • 2 ounces cream of coconut
  • 2 ounces pineapple juice
  • 1 cup crushed ice
  • Garnish
  • 1 slice pineapple
  • 1 whole fresh strawberry

Equipment

  • Blender
  • Hurricane glass (or tall glass)
  • Measuring jigger or measuring cups
  • Bar spoon (or regular spoon for layering)

Method
 

  1. Add the rum, strawberries, lime juice, simple syrup, and crushed ice to a blender. Blend until smooth and thick like a frozen smoothie.
  2. Pour the strawberry mixture into a chilled Hurricane glass and place it in the freezer for 3–5 minutes to help it firm up.
  3. Quickly rinse the blender so the next layer stays bright white.
  4. Add the remaining rum, cream of coconut, pineapple juice, and crushed ice to the blender. Blend until creamy and thick enough to slowly fall from a spoon.
  5. Remove the glass from the freezer. Slowly pour the Piña Colada mixture over the back of a spoon to create clean layers.
  6. Garnish with a pineapple slice and fresh strawberry. Serve immediately while both layers are thick, icy, and well defined.

Notes

  • Chill your serving glass before layering to help keep the frozen layers separate.
  • If the mixture seems too thin, blend in a little more crushed ice before pouring.
  • Fresh lime juice gives a brighter flavor than bottled juice and balances the sweetness of the drink.
