  • 1/2 cup brown sugar packed
  • 1/2 cup hoisin sauce
  • 1/4 cup bourbon or apple juice as substitute
  • 1/4 cup water or chicken broth
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 2 tablespoons cornstarch for coating or slurry
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 1 pinch red pepper flakes optional
  • 2 tablespoons green onions chopped, for garnish
  • Salt and pepper to taste

Method
 

  1. In a bowl, whisk together soy sauce, brown sugar, hoisin sauce, bourbon, water, garlic, and ginger until smooth and well combined.
  2. Toss chicken pieces with a little salt, pepper, and cornstarch until lightly coated for better browning.
  3. Heat vegetable oil in a large skillet over medium-high heat until hot and shimmering.
  4. Add chicken in a single layer and sear until golden brown on all sides, about 5–7 minutes.
  5. Pour in the prepared sauce mixture and stir well, letting it bubble and coat the chicken.
  6. Reduce heat to medium and simmer until sauce thickens into a glossy glaze, about 7–10 minutes.
  7. Stir occasionally and scrape the bottom of the pan to enhance flavor and prevent sticking.
  8. Add sesame oil and optional red pepper flakes, mixing until fully combined.
  9. Cook until chicken is fully cooked through and sauce is sticky and shiny.
  10. Remove from heat and garnish with chopped green onions before serving.

  • For extra crispy texture, lightly coat chicken with cornstarch before searing.
  • If sauce is too thin, simmer longer until it reaches a sticky, syrupy consistency.
