Ingredients
  

  • ounces Blue Chair Bay Coconut Rum
  • ¾ ounce peach schnapps
  • ½ ounce blue curaçao
  • ½ ounce sweet and sour mix
  • 6 ounces fresh lemonade
  • 1 cup ice cubes plus extra for serving
  • ½ slice orange
  • 1 whole maraschino cherry
  • 1 sprig fresh mint optional, for garnish

  • Jigger
  • Strainer
  • Large cocktail glass or highball glass
  • Bar spoon

Method
 

  1. Place your serving glass in the freezer for about 5 minutes until it feels cold and slightly frosty.
  2. Fill a cocktail shaker halfway with fresh ice cubes to quickly chill the drink.
  3. Add the coconut rum, peach schnapps, blue curaçao, sweet and sour mix, and lemonade to the shaker.
  4. Seal the shaker and shake vigorously for 10–15 seconds until the outside becomes icy cold.
  5. Fill the chilled serving glass with fresh ice, then strain the cocktail over the ice for a bright, clear finish.
  6. Garnish with the orange slice, maraschino cherry, and fresh mint if using. Serve immediately while ice cold.

Notes

  • Fresh lemonade gives the brightest citrus flavor, but quality bottled lemonade also works well.
  • Always use fresh ice instead of the ice from the shaker to keep the drink crisp and clear.
  • Measure each ingredient with a jigger to maintain the perfect balance of coconut, peach, and citrus flavors.
