Ingredients
  

  • 1 3-ounce box lime-flavored gelatin
  • 1 cup boiling water
  • ½ cup blanco tequila
  • ½ cup cold water
  • 2 tablespoons triple sec optional, for margarita flavor
  • 1 tablespoon fresh lime juice optional
  • 18 small plastic shot cups
  • 1 lime cut into small wedges optional garnish
  • 1 pinch coarse salt optional garnish

  • Medium mixing bowl
  • Whisk

  • Small measuring pitcher or liquid measuring cup with spout
  • 18 plastic shot cups with lids
  • Refrigerator

Method
 

  1. Bring 1 cup of water to a full rolling boil. The water should have large bubbles before using it.
  2. Pour the boiling water into a medium mixing bowl and whisk in the gelatin for about 1 minute until completely dissolved. The mixture should look smooth and glossy.
  3. Let the mixture cool for about 2 minutes so it is still warm but no longer steaming heavily.
  4. Stir in the tequila, cold water, and optional triple sec and lime juice until fully combined. The mixture should remain smooth without separating.
  5. Carefully pour the mixture into plastic shot cups, filling each about three-quarters full. A measuring cup with a spout helps prevent spills.
  6. Place the cups on a tray and refrigerate for 2–4 hours, or until fully set. The tops should feel firm and spring back lightly when touched.
  7. Garnish with a small lime wedge and a light sprinkle of salt if making a margarita-style version.
  8. Serve chilled directly from the refrigerator for the best texture and flavor.

Notes

  • Chill the tequila before mixing to help the gelatin begin setting faster.
  • Do not replace too much water with alcohol, or the shots may stay soft.
  • Make the shots the night before your party and keep them covered in the refrigerator until serving.
