Ingredients
  

  • 2 ounces bourbon
  • ¾ ounce honey
  • 4 to 6 ounces hot water about 160–180°F
  • 1 tablespoon fresh lemon juice
  • 1 slice lemon
  • 1 stick cinnamon stick
  • 1 whole star anise optional

  • Heatproof mug
  • Electric kettle or small saucepan
  • Spoon

Method
 

  1. Warm a heatproof mug by filling it with hot water for 2–3 minutes, then empty it. A warm mug keeps the drink hot longer.
  2. Pour the bourbon into the warm mug and add the honey. The honey will settle at the bottom at first.
  3. Add the fresh lemon juice. The citrus aroma should become noticeable right away.
  4. Slowly pour in the hot water, keeping it hot but not boiling. Stir until the honey completely dissolves and the drink looks clear and golden.
  5. Add the lemon slice and cinnamon stick. If using star anise, drop it into the mug for extra spice.
  6. Let the drink sit for about 1 minute so the spices release their flavor. Serve immediately while hot.

Notes

  • Use water around 160–180°F instead of boiling to keep the bourbon's aroma and flavor.
  • Warm thick or crystallized honey for a few seconds before mixing so it dissolves easily.
  • Fresh lemon juice gives a brighter, cleaner flavor than bottled juice.
