Ingredients

  • 1 ½ cups raw honey
  • 1 tablespoon red pepper flakes
  • 1 teaspoon hot sauce (optional)
  • 1 teaspoon apple cider vinegar
  • 1 pinch salt

Equipment

  • Small saucepan
  • Wooden spoon or silicone spatula
  • Fine mesh strainer
  • Heat-safe jar with lid

Method

  1. Pour the honey into a small saucepan and place over low heat. Warm gently until it becomes thin and easy to stir; do not let it simmer or boil.
  2. Stir in the red pepper flakes and continue heating on very low for 5–7 minutes. The honey should stay fluid and slightly more aromatic.
  3. Remove from heat and let the mixture steep for 5 minutes. The color will deepen slightly as it infuses.
  4. Stir in the hot sauce, apple cider vinegar, and salt until fully combined.
  5. Taste and adjust heat by adding a small pinch of extra pepper flakes if desired.
  6. Strain through a fine mesh strainer into a clean, heat-safe jar for a smooth finish, or leave flakes in for stronger heat.
  7. Allow to cool completely before sealing. The honey will thicken slightly as it cools.

Notes

Store at room temperature for up to 1 month in a sealed jar.
For stronger heat, let the pepper flakes steep longer before straining.
Avoid high heat while cooking to preserve the honey’s natural flavor and prevent bitterness.
