Ingredients
  

  • 500 g ground beef 80/20 recommended for juiciness
  • 1 large egg binds the mixture
  • 30 g panko breadcrumbs keeps patties soft
  • 1 tbsp Worcestershire sauce adds savory depth
  • 1 tbsp salt
  • ½ tbsp black pepper
  • 2 tbsp olive oil for cooking
  • 2 tbsp water optional, helps moisture if needed
  • 4 slices burger cheese optional topping
  • 4 pieces burger buns for serving
  • 2 medium tomatoes sliced for serving
  • 4 leaves lettuce for freshness
  • 4 tbsp mayonnaise or mustard optional sauce

Method
 

  1. Add ground beef, egg, breadcrumbs, salt, pepper, and Worcestershire sauce into a large bowl. Mix gently until just combined and the texture looks even. Do not overmix or the patties will become tough.
  2. Divide the mixture into 4 equal portions and shape into round patties about 4–5 inches wide. The surface should look smooth but slightly firm.
  3. Press a light thumb indent in the center of each patty if they are thick. This helps them cook evenly and stay flat while cooking.
  4. Heat olive oil in a heavy pan over medium-high heat until slightly shimmering. Place patties in the pan and listen for a steady sizzle.
  5. Cook for 5–6 minutes on the first side until a brown crust forms. Flip carefully when the edges look golden and slightly crisp.
  6. Cook the second side for another 5–6 minutes until fully browned and juicy. Avoid pressing down so the juices stay inside.
  7. If using cheese, place a slice on top during the last minute and let it melt. The surface should look glossy and soft.
  8. Remove from heat and rest for 2–3 minutes before serving. This helps the juices settle inside the patties.

Notes

Use 80/20 beef for the juiciest results. Lean beef can turn dry unless extra fat is added.
Do not overmix the meat or the patties will become dense and rubbery.
Let patties rest after cooking so they stay juicy when bitten.
